You can get a free trial of Copilot on a personal Microsoft 365/OneDrive account, I'd recommend setting that up with a set of documents that is not confidential and that you know something about. Then test out the RAG capabilities to see how close it gets to what you want. For security reasons within your company, I would imagine staying within the Microsoft universe would give you the fastest buy-in.
I totally get what you mean about there being a shinier thing around the corner. But I think at the current pace of change, the corners will only get closer and the things around them shinier. So best to just start testing stuff out for as low a marginal cost as you can.

I have been looking into doing something similar. Have you tried using Microsoft Copilot or Google Gemini on you document repository in Sharepoint/Google Drive? That might give you at least some of what you are looking for (and I assume what Craig Stadnyk is talking about).
You could also try https://notebooklm.google.com/ for smaller document sets.
For a more complete solution, there are some off-the-shelf services that could be repurposed for this I think (https://www.docugami.com/, https://www.graft.com/). Then there are several combinations of commercial and opensource software you can use to build something yourself.
This is a good reminder for me to try to put together something workable myself. I'll see what I can come up with.
